Hot Tomato Grits
Ingredients
- 2 slices bacon diced
- 1 14- ounce cans low sodium chicken broth
- 1/2 teaspoon salt
- 1 cup quick cooking grits
- 2 to matoes peeled and diced
- 2 tablespoons chopped canned green chiles
- 1 cup shredded sharp cheddar cheese
Instructions

Cook the bacon in a heavy pan until crisp. Drain fat. Add in the broth and salt, and bring to a boil.

Stir in the grits, tomatoes, and chiles. Return to a boil, and then reduce heat.

Simmer the grits 15 to 20 minutes. Remove from heat.

Stir in the cheddar, and cover the pot. Let stand 5 minutes to melt the cheese.

Serve.
