This recipe can be used as a marinade, or as a sauce. If using as a marinade though, do not reuse the leftover marinade after it has been marinated raw meats. Discard after marinading, and create a new recipe to serve table side.

Adobo Marinade

Ingredients
  • 1/2 cup orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons wine vinegar
  • 3 chipotle chiles canned
  • 3 cloves garlic
  • 2 teaspoons oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
Instructions
  1. Blend all ingredients in a food processor until smooth.
  2. Marinade pork from 2 to 24 hours in refrigerator before cooking, discarding any leftover marinade.
