From luckypeach.com – the Beach Burger. Shio kombu is prepared first (a mixture of shredded kombu, soy sauce, rice vinegar, sake, mirin, and sugar). Wagyu chuck steak is ground with boneless short ribs, the prepared shio kombu, some nonfat milk powder, and Kosher salt. The nonfat milk powder is used in traditional sausage making and helps give this burger structure without any wetness. Of course, pine pickles are served with it (yes, made with pine essence). If you are looking for something different to grill, this would make a great choice.
